Most people know that the tongue is very good at defining sweet, salty and bitter.. but fat... Can the tongue do that too? New research at Washington University School of Medicine in St. Louis shows that some people (those who have a variant of the CD36 gene) more fat receptors on the tongue than others. These people have an increased sensitivity to “fat”. This sensitivity ensures that they get their fat 'tax' faster, so they don't need more fat. Their food choice will then unconsciously be adjusted accordingly. Those who do not have a variant of the CD36 gene need more fat to satisfy their “appetite” for fat. Many will think: “That's me!! I probably have fewer fat receptors on my tongue, which is why I want fatty foods so much!” Fat contains 9 calories per gram. Even though there are a lot of varieties “healthy” fats such as olive oil, nuts, and omega-3 fatty acids, they should be consumed very modestly. No matter what your genes dictate to your tongue, pause for a moment and take control of the situation “healthy” fats to choose and in modest amounts!
